At the 7th Dairy Congress in Cremona – A.i.Te.l.: the Italian Dairy Technicians Association, Igea presents the research poster of the SHIELD® product range
On September 7th, 2023 in Cremona, at the Campus S. Monica, the 7th A.i.Te.l Dairy Congress,will be held, where topics such as: agricultural production, animal welfare, dairy processing and the sustainable valorisation of dairy products will be discussed.
During the session "Milk and dairy products: a supply chain that confronts sustainability" Igea will present the research poster of its SHIELD ® range of bio-protection cultures.
The session will be organised by A.i.Te.l (the Italian Dairy Technicians Association) and in collaboration with the Università Cattolica del Sacro Cuore.
The range of protective cultures SHIELD ®, was developed through an experimental design that analysed the effect of environmental and process factors considering the intensity spectrum of antimicrobial activity of strains selected for their antagonistic abilities.
Protective cultures, which today are of particular interest to dairy producers due to their ability to eliminate or reduce the use of chemical additives and fulfil the requirements of clean and short label.
Igea, together with the R&D team of Mediterranea Biotecnologie and Scienzanovahanno , developed a range of multi-strain formulations based on the antagonistic activity of individual strains towards yeasts, moulds and gram-negative (Pseudomonas spp., Escherichia coli) and gram-positive (Listeria monocytogenes) bacteria.
On the basis of the results, three distinct cultures were formulated with multiple and complex compositions, capable of excellent inhibitory activity at different pH conditions, characteristic of specific
Dairy macro-categories.
The SHIELD ® research studies were carried out in collaboration with the
University of Molise.
